I first discovered kombucha 12 years ago when a bottle was handed 
to me after my first ever hot yoga session.


Its refreshing and energising kick helped me recover from the exertion of 90 mins contorting my body in a sweaty studio. From thereon I was curious about this peppy health drink that had given me such a boost.

I have experienced various gut health issues throughout my life and became fascinated by the benefits of fermented food and drink in improving digestion and easing other symptoms. Later, on a visit to the US, I went to a dedicated kombucha bar in Portland Oregon, and was inspired by the diverse range of flavours and purity of the products on offer. Fast forward to 2023, I decided to take the plunge and create my own booch, with the aim of producing the purest, highest quality brew on the market.

I wanted to use locally sourced ingredients and avoid anything artificial. Using refined sugar was a no for me, so I contacted a local beekeeper, Happy Honey Home, and experimented with raw honey instead. After researching various options to achieve the best flavour at a commercial scale, I invested in Oak barrels and then took my process out of the kitchen, into a dedicated micro brewery.

After many attempts at getting the proportions just right, I was delighted with the results and started selling at markets and events around Sussex. It was wonderful to get feedback from customers, many of which were kombucha fans and told me it was the best they have tasted. Others had to be coaxed into taking a sample, but were pleasantly surprised by their enjoyment.

When it came to branding it was important to bring out the companies Brighton roots. I worked closely with brand expert, Bill Wallsgrove, and a local design agency, Sherlock, to come up with pop art inspired labels that celebrate Brighton landmarks and culture.

I could not have picked a better city to start my fermentation journey, surrounded by the purity of the South downs and benefitting from the cooling breeze of the coast. I could not have chosen a better audience, as Brighton people love to champion local businesses and healthy, ethical produce.

It has been heartening to see my bottles selling out around the city and I can not wait to spread the Pop Cultures across Sussex and beyond..
