It Starts with 100% Pure Organic Honey
We use 100% pure organic honey as our fermentation base – and a Jun SCOBY specifically adapted to ferment with it. The honey isn’t just a sweetener. It contributes its own complex flavour compounds, natural enzymes, and antimicrobial properties to the ferment, producing a brew that’s naturally smoother, more nuanced, and richer in character than refined sugar based products.

We brew in small batches in Brighton – which means every batch gets full attention. We’re not running an automated bottling line; we’re monitoring fermentation closely, tasting regularly, and making calls based on what’s in front of us. Small batch isn’t a marketing phrase for us. It’s how we maintain the consistency and quality that a 2-Star Great Taste Award demands.
Aged in Oak Barrels
After the initial ferment, our base kombucha is aged in 100-litre oak barrels – a step you won’t find in mass-produced kombucha. Oak ageing adds subtle depth and a gentle roundness to the brew, smoothing out any sharp edges and developing a more complex flavour profile over time. It’s the kind of care that’s hard to replicate in mass produced products.
Flavoured with 100% Pure Fruit and Spices
Once the base ferment is ready, each batch is flavoured using only real ingredients – no concentrates, no ‘natural flavourings’, or shortcuts. Our current flavours are:
- Zingy Ginger & Lime – freshly squeezed lime juice and ginger, balanced by honey’s natural sweetness
- Raspberry & Ginger - 100% raspberry puree with a warming ginger background
- Apple & Cardamom - crisp fresh apple with cardamom, cinnamon and ginger
Naturally Carbonated in the Bottle
Our kombucha is naturally carbonated – the gentle fizz develops inside the bottle as fermentation continues. This means every bottle is a living product. The carbonation is lighter and more natural than force-carbonated drinks, and you may notice it varies slightly batch to batch. That’s not a flaw, its natural fermentation.
